PERI PERI CHICKEN:

Ingredients

  • 1 whole Chicken, cut in two halves – 1100gm (this one was with skin)
  • Nando’s peri sauce (medium hot)- half cup
  • Extra virgin Olive oil – about half a cup
  • Hoisin sauce- 1 tbsp (agar a ho then it could be replaced with soy sauce or oyster sauce I guess)
  • Paprika powder – 1 tsp
  • Black pepper (Ghar ki pisi hui is always better)- 1 tsp
  • Salt- 1 heaped tsp (I used pink salt if you use regular table salt then useless)
  • Garlic (finely chopped)- 1 heaped tsp
  • Ginger (finely chopped) – 1 heaped tsp
  • Dry rosemary- 2-3 pinch

RECIPE:

Marinade the chicken with all the ingredients for at least 2 hours (better overnight). Next, on a HOTTT grill pan, put the chicken skin side down and let it SIZZLE NICELY (without adding any extra oil) to give it good charr. Don’t add the remaining marination to the pan yet.

Cook the chicken for about 3-4 mins on both sides while pressing it all over to get an even char. Now shift this chicken onto a baking dish (skin side up), pour the leftover marination all over it, cover with foil and bake it in a preheated oven at 180°C for 45-47mins. Before serving, tray mn jo juices and sauce Hoga, pour the marinated masala on the chicken after baking while it’s still hot, it will stay moist Insha’Allah.

! Enjoy 🙂 You can serve it with garlic rice or mashed potatoes and sauteed vegetables.

Note: If you don’t have an oven then I guess you can also cook it in a pot, on low flame (dum par) But I used to bake
